CHEF TARZAN - Mushroom Bourguignon

  • Bruno Calegari Paris Pink Mushroom 800g
  • Red Wine 250ml
  • Carrot 100g
  • Onion 100g
  • Pearl Onion 6-8pcs
  • Tomato Paste 2 tablespoon
  • Beef broth 500ml
  • Butter 100g
  • Thyme 3g
  • Salt few
  • Black Pepper few

BRUNO CALEGARI French Pink Paris Mushroom with Whole Foot  (250g)



  1. Heat the pot on high heat, and add butter
  2. Add mushrooms when the butter starts to simmer
  3. Stir frequently over high heat to keep the moisture of mushroom
  4. Add pearl onions when the mushrooms are shrunk
  5. Take mushrooms out when water is released
  6. Add onions, carrots & thyme, and cook until the onions are browned
  7. Add red wine and boil it until 1/3 left
  8. Add tomato paste and beef borth
  9. Add mushroom and cook for 20-30 minutes
  10. Mix flour and butter in a new bowl to form a cold roux
  11. Add the roux to the mushroom stew (a little bit at a time)
  12. Add salt and black pepper as seasoning
