Taiwanese Minced Pork Rice

Method
- Step
- Add sugar, garlic powder and soy sauce to minced pork, and mix all ingredients by hand
- Let the minced pork sit and marinate for 20 minutes
- Once the oil is heated, add the chopped shallots and minced ginger
- When the shallots turn translucent, add the mushrooms in ( Mushrooms have been soaked in water for half an hour and chopped)
- Once you can smell the mushroom aroma, it’s time to add the pork
- Add chicken stock, water, soy sauce, crystal sugar & dark soy sauce for a darker colour when the pork is about done
- Stir everything till even, then simmer on medium heat for 12 minutes
- If it’s still too moist at this point, you can add a little starch water for thickening
